Today Madeleine shows us an amazing breakfast you can whip up in 5 minutes... perfect for before school or work. Her porridge is made with coconut milk and topped with caramelized banana and lime. It’s a tasty tropical spin on the breakfast favourite... and so healthy too. It’s also suitable for vegans. Give it a try! What’s your favourite healthy breakfast recipe? MADELEINE’S RECIPE (SERVES TWO) 2 cups of coconut milk 1 cup of oats 1 vanilla pod 1 teaspoon cinnamon 1 banana 1 tablespoon coconut oil 1 lime Method 1. Place the oats, milk, cinnamon and vanilla in a sauce pan. Bring to a low-medium heat and cook for up to 5 minutes. 2. While the oats are cooking, slice the banana in half and peel off the skin. 3. Heat a pan to medium heat with the coconut oil. Place the banana half into the pan and cook for a few minutes until caramelized. 4. Serve the banana on top of the porridge and add fresh lime zest.
